{no-bake + gluten-free}
Let’s talk about these chocolate bars! I’ve been trying to cut back on processed sugars over the past year {ok… several years!} It’s not always easy, since I’m the busy mama of four, have a crazy love of baking, and have a total sweet tooth! These days, I try to sweeten the treats I make using raw honey, when I can. I feel so great when I’m able to offer my kids a wholesome, homemade treat using fine, simple ingredients. These Chocolate Almond Oat Bars are just that.
With only seven ingredients, these chocolatey bars are super easy to make and even more delicious to bite into! Once chilled, they remind me of a piece of fudge… only healthier! Creamy, sticky almond butter bind the hearty oats and chocolate together, while the honey adds a touch of sweetness! The chopped roasted almonds give the bars an extra, satisfying crunch!
Once you taste one… you may not want to share! You may want to hide these babies in the back of your fridge and indulge all. by. yourself. {Okay, okay… that’s not in the holiday giving spirit!} Truthfully, these would make the most delicious edible gift to give to family and friends + they’re gluten-free! With so many people avoiding gluten these days, this is a really tasty option to make and share! Enjoy!
Chocolate Almond Oat Bars
Ingredients
- 1 cup smooth {unsweetened} almond butter
- 1/3 cup raw honey
- 1 stick {8 Tbs.} unsalted butter
- 2 cups rolled old fashioned *oats
- 1/2 cup roasted almonds coarsely chopped
- 6 ounces semi-sweet chocolate chopped {approx. 1 1/4 cups}
- 1/2 teaspoon sea salt
- *If you're making gluten-free make sure the oats you use in the recipe are processed in a gluten-free facility.
Instructions
- Coat an 8 x 8 inch square baking pan with parchment paper. {Leave 2 inches of parchment paper overhang on 2 sides of the pan.}
- Melt the first three ingredients {almond butter, honey, and butter} in a saucepan over medium heat, stirring until melted and combined -- about 6 minutes.
- Remove the mixture from heat and stir in the remaining ingredients {oats, chopped almonds, chocolate and sea salt} until melted and well combined.
- Pour the mixture into the prepared baking pan. {Use a spatula coated in cooking spray to spread evenly.}
- Refrigerate for at least 3 hours and up to 1 day.
- To cut and serve, use the overhang edge of the parchment paper to lift the bars from the pan. Transfer to a cutting board and cut into 20 bars or smaller bite-sized pieces.
- Store in the refrigerator for up to 3 days.
