Cupcakes have to be one of my favorite items to bake! I love them because I don’t feel as guilty eating one, as I do making a cake. Cupcakes always seem to put a smile on my family’s face. Though I love the actual cake portion of the cupcake, I adore the frosting the most! It is something I have enjoyed since a child. My favorite is a light whipped cream frosting, but a good butter cream frosting {that is not too rich}, is a wonderful topping on any cupcake! My favorite butter cream frosting is by Magnolia Bakery. I have made it a million times, and have added a few items and recreated it into other butter cream flavors. Yes I know… very vanilla, but sometimes simple is best!
Butter Cream Frosting
Rich and delicious butter cream frosting.
Servings: 2
Ingredients
- 7 cups powder sugar sifted
- 2 sticks of unsalted butter
- 1/2 cup whole milk I find 2% works just fine, too
- 2 teaspoons vanilla
Instructions
- Place butter in the bowl of a mixer.
- Mix butter until smooth.
- Add first 3 cups of sugar and blend.
- Add 1/4 cup milk and blend.
- Add vanilla.
- Add 4 cups of sugar and blend.
- Add last 1/4 cup of milk and blend.
Notes
I like to color my frosting when it is a theme or holiday. Add the coloring in at the end. I recommend a little at a time... then blend. Enjoy this wonderful recipe! This can always be combined with a boxed cupcake mix when in a hurry and it still will taste homemade!
