:: Lemon Blueberry Simple Syrup ::
Get ready….get set….Memorial Weekend here we come!!! Can you believe the start of summer is just around the corner?!! Sara and I are counting down the weeks until school is out. We are dreaming of summer sun, the kids sleeping in {we can wish} and fun summer drinks enjoyed by all. This Lemon Blueberry Simple Syrup is just as it’s stated….simple and perfect topped with lemonade, turned into a festive summer cocktail, or better yet given as a gift.
On Mother’s Day, we celebrated at home. Yes, I had high hopes for champagne cocktails at an over crowded restaurant, but my husband had been gone for a couple days at work, and things just did not pan out the way we had planned. Instead we decided to chill out in our backyard and give our garden box some love, and make our own champagne cocktail at home.
It made for the perfect timing to create my own Lemon Blueberry Simple Syrup, inspired by some of my favorite cocktails and spirits. I poured a little at the bottom of a glass for the kids…topped it with lemonade, and it tasted like summer. I made the hubby and I bit more of an adult lemonade with the lemon blueberry simple syrup, a splash of St. Germain, a dash of vodka, and topped with champagne….delicious!!! I couldn’t help myself….I had to share, and so I did! I added this to an early summer birthday basket for dear friend. The Lemon Blueberry Simple Syrup paired with spirits, a fun cocktail glass, and a summer succulent. A fun way to say Happy Birthday or a great way to say “Thank-you” as an end of year teacher gift {minus the spirits} but then again they might need them more than us {wink}! Cheers!
Lemon Blueberry Simple Syrup
Ingredients
- 1 cup sugar
- 1 cup water
- 1 half lemon sliced
- 2 tablespoons lemon juice
- 2 teaspoons lemon zest
- 5 springs of mint
- 1/4 cup frozen or fresh blueberries
Instructions
- In a small pot add the sugar and water.
- Set on high and bring to a boil.
- Once boiling lower the heat and add the lemon juice and lemon zest.
- Continue until the sugar is dissolved.
- Add frozen blueberries for one minute.
- Pull off the heat.
- Let cool.
- Pour in a covered juice container.
- Add the lemons and mint.
- Close and place in the fridge.
