:: Peanut Butter Banana Ice Cream Sandwiches ::
Oh, how I’ve longed for an evening to sit down and write a post for Simply! The last few weeks have been consumed with our move… so I have been looking forward to a little creative down time!
Today, I decided the kids could use a special treat! They’ve been such troopers living amongst boxes the past week… and doing without their favorite belongings, which are currently sitting in our over-stuffed garage. I wanted to make them something completely delicious, but didn’t have an abundance of resources to work with {if only you could see the state of my kitchen}!
We made a quick trip to our nearby Super Target {you have no idea how lucky I feel to have one close after spending the last year in the mountains — it’s the little things!} and picked up a few ingredients to make a tasty dessert that was semi-homemade.
These Peanut Butter Banana Ice Cream Sandwiches totally did the trick! The kids were so thrilled when I called them downstairs to bite into one!
Who doesn’t love the combination of peanut butter and banana?!! Paired with creamy vanilla ice cream, and chewy chocolate chip cookies… it’s the perfect, SIMPLE summer treat! Enjoy… and wish me luck unpacking this place! School starts for my kids next week… so I need to get busy!
Peanut Butter Banana Ice Cream Sandwiches
Ingredients
- 1 pound {refrigerated ready to bake} chocolate chip cookie dough {I used Pillsbury}
- 1/2-3/4 cup creamy peanut butter
- 2 medium-sized bananas
- 1 carton of vanilla ice cream softened {I used Breyers}
Instructions
- Bake 12 {equally-sized} cookies, according to package instructions. Set aside to cool.
- When cookies are cool, spread peanut butter on the bottom of 6 cookies.
- Top with a few slices of fresh banana.
- Using an ice cream scoop, dish about 1/3 cup softened ice cream on top of the banana slices.Place a chocolate chip cookie on top ,and gently press to form a sandwich. Repeat with the remaining ice cream and cookies.
- Serve immediately, or wrap in plastic wrap and store in the freezer.
- If frozen, allow cookies to sit out for a few minutes on the counter {so the cookies won't be too hard to bite}.
