Okay, so I am going to date Sara and I with this Strawberry Shortbread Pie Recipe. We don’t talk about our age, but let’s say besides Sara being my favorite red head; Strawberry Shortcake was mine as a kid. Luckily our girls have been able to experience one of our favorite childhood characters. Strawberry Shortcake and Cabbage Patch Kids were a big deal at the age of 5. In fact because of Strawberry Shortcake, I had asked for a Strawberry Cake for my 6th birthday party. From then on I loved everything that was strawberry. This Strawberry Shortbread Pie is an ode to all things strawberry. These little red berries make me happy and their sweetness makes for a winning combination with Walkers Shortbread Round Cookies. The mixture of the two makes for an awesome yet simple spring time pie!
We are a little blessed to experience these magical berries for most of the year. Sometimes we forget that strawberries aren’t as readily available to most of the country until the summer. Strawberries honestly, {besides all the talk of Strawberry Shortcake talk} have been a big part of my life. My Grandma Joan was a Californian Native. She was a fourth generation Californian. Making her family here in the state long before it was even a state. She had a fondness for strawberries. She liked to bake with them and she grew them in her backyard. My sister and I loved to see the little white flowers turn into red berries. Picking them and eating them straight from her garden was our favorite part.
In fact in a way this recipe is dedicated to her. It is my Grandma’s Strawberry Pie Recipe. I hope you enjoy it….
Enhancing the Strawberry Shortbread Pie flavor is due to these little Walkers Shortbread Rounds. They make the base of this pie. A little butter, a little sugar, and a few little cookies blended up in the food processor helped to make this pie crust.
The filling is super simple and sweet all wrapped into one. Two pounds of our favorite California Strawberries plus cornstarch and sugar, make for an easy pie. Who knew a pie could be so simple….

Strawberry Shortbread Pie & Giveaway
Ingredients
- 2 lbs. of strawberries 32 ounces
- 14 shortbread round cookies
- 6 tablespoons of unsalted butter
- 1 1/3 cups plus 2 tablespoons of sugar
- 3 tablespoons of cornstarch
- 3/4 cup water
- 3 drops of red food dye
- 1 pie tin
- 1/2 cup heavy whipping cream
- cooking spray
Instructions
- Wash and hull the strawberries.
- Cut the strawberries in quarters.
- Set aside.
- Preheat the oven to 375 degrees F.
- Lightly spray 1 pie tin or pie plate.
- *For the crust:
- In the base of a food processor add 14 cookie rounds, butter, and 1/3 cup sugar.
- Pulse until the mixture becomes dense and well blended.
- See picture in the recipe above.
- Once the mixture is blended, scoop the pie crust into a pie pan.
- Lightly press the mixture into the pan and set in the oven.
- Bake for 10-12 minutes until golden brown.
- Remove from the oven and let cool for 20 minutes.
- *For the filling:
- While the crust in baking, pour the water, 1 cup sugar, and cornstarch into the base of a sauce pan.
- Whisk while cooking.
- Let this mixture come to a boil.
- Once lightly boiling, turn down heat and add 1 pound of the strawberries to the sauce pan.
- Mash and mix the strawberries until fully blended and light pink.
- Add three drops of red food dye {optional}
- Cook time 5-10 minutes.
- Set aside and let cool.
- *To complete the pie:
- Take the baked pie crust and add the remainder 1 pound of strawberries over the crust.
- Pour the cool pie filling over the strawberries.
- Lightly spread over the whole pie until evenly distributed.
- Place the pie in the fridge for 2 hours to let cool and combine.
- Top the pie with fresh whip cream.
- Pour 1/2 cup of heavy whipping cream in the bowl of a stand mixer fitted with the whisk attachment.
- Set the the mixer on medium high until the cream starts making light peaks.
- Add two tablespoons of sugar.
- Keep mixing until firm peaks are formed.
- Top over the cooled Strawberry Shortbread Pie.
